Cutting hull for speed/depth transducer

I plan to fit a new speed transducer into my Oceanis 311. The new model requires a larger diameter hole than the existing one. Can anyone tell me the best way of cutting a hole where the centre is already gone! (i.e. the centre drill to keep the hole saw in place can't work.)
